At least this was clear from the answers to an informal survey among Sofia residents, from which we also learned what the secret of a good pie is.

The woman says that they do it because of the lucky ones, which, of course, they choose and even write different ones every year. We are trying to make them more cheerful, and this year we will see what will come out, said the woman, but she is adamant that there are always good fortunes for health and love in the pie.

Ani and Elena don’t make a pie, but only because grandma does. And she, of course, is lucky. Annie ran out of money for two Christmas pies this year. He also wishes for the money for the New Year. However, the young woman says that when she draws her fortune, she most wants to see the one on which she writes health. “That’s the most important thing – you do everything when you’re healthy and happy and in harmony,” she said. Both Ani and Elena are adamant that a pie should be made for the New Year and it is a traditional dish that every Bulgarian loves. If grandma doesn’t make a pie, they’ll buy one. Here, however, while Ani explains where she liked pies, Elena joins in with the promise that they will make their own.

A man in the park admitted with a smile that he neither makes a pie, nor is it made for him, and explains: “I’m alone.” Sometimes, however, he buys and always with luck. He doesn’t remember those he liked, he doesn’t even say what he wants to like. It just states: whatever comes.

My children, since they don’t live with me, I don’t make a pie, says Daniela, who once even used to grind crusts, but as she explains now with “those benefits in the shops” she doesn’t do it, she buys them. She used to make pies with fortunes made from dogwood sprigs and named after the number of buds. If she does this year, she wants to draw good luck for life and health and for her children to be around her. “Because it’s getting more and more difficult for me to convince them that they should stay in this country, it’s becoming very difficult for me,” the woman said.

And if you are a housewife who wants, but doesn’t have time, to make a pie yourself at home, you can also buy one. If you order, they can also put lucky charms and a coin inside and the price is the same as usual without them – 7 BGN. At least that’s how it is in a popular Sofia pastry shop on ul. Positano next to the Courthouse. Petya, who works here, admits that making a nice traditional Bulgarian cheese pie is not easy, and that’s because you have to know how much fat and filling to put. This is so, the woman explains, so that the pie can be baked well and not remain raw on the outside. So not always the most filling makes the pie better, everything should be in moderation. They make pies with bacon, chicken fillet, pumpkin, apple, but the one with cheese is the most sold. And as the old saying goes: the shoemaker walks barefoot, the tailor goes naked, so Petya, even though he is a pastry chef, does not make pies at home. But he buys from the bakery where he works. Here they put both lucky coins and money, and the lucky coins, although bought, are still selected – not all of them are put in, but the best ones.
