The restaurant L’Équerre, opposite the Maritime Museum in Toulon, has become a must in the region. This bistronomic address has bet on a neat decoration: terrazzo floor, design inspired by the sea, mahogany parquet as if to recall the deck of a boat. Gold and blue colors flood the room lit by a magnificent 19th century glass roof restored to the same and attributed to the Ateliers Eiffel. A great skylight.
If the atmosphere is there, the flavors are not left out. L’Équerre integrated into its team, two years ago, a chef of barely thirty, Yoann Silve. “There is always a little pressure, it’s my first job as a chef, then it was the opening of a new establishment. To this was added the difficulty of finding suppliers during the health crisis . But my team and I, we hung on!”
Card renewed
A bet on youth less risky than it looks because it is alongside starred chefs that this Manosquin native has perfected his culinary know-how. He thus trained at La Bonne Etape in Château-Arnoux with Jany Gleize, at La Bastide in Gordes, at the Couvent des Minimes in Mane and, finally, at San Felice, with Christophe Bacquié at the Hôtel du Castellet.
A well-filled CV which allowed him to take the helm of L’Équerre with confidence. “What I like is adapting to seasonal products.” So after the winter menu, the menu currently offered is not fixed, Yoann Silve works mainly in suggestion. “Until the last moment there may be changes”, warn the boss.
Super value for money
An adaptability that does not prevent us from staying the course, that of a seasonal and revisited Mediterranean cuisine.
For example, this Thursday, as a starter, the menu displays asparagus from Provence, bottarga mimosa (19 euros) or a burrata accompanied by peas, summer truffles and strawberries from Ollioules (20 euros).
In terms of dishes, the Mediterranean obliges, fish has a place of choice: fillet of sea bass with saffron and fennel (25 euros), or gilthead sea bream and its gourmet peas (22 euros).
Gourmet, colorful and hearty dishes, prepared with local products (La Ferme des olivades, La Serre du Plan, Carotte et Cocotte…) because L’Équerre favors local products.
The price-performance ratio is therefore attractive. A way to anchor L’Équerre as a Toulon staple.
Another novelty of the season: the launch, from this Thursday, of “Groovy Thursdays” between 6 p.m. and 10 p.m. On the menu: signature cocktails and tapas. And this Thursday evening it is the DJ Oliver Hosts who will take care of the musical atmosphere.
