Why Do Some Hard-Boiled Eggs Have a Blue or Greenish Hue?

We prepare hard-boiled eggs most often as part of breakfast or various cold dishes and sandwiches. Especially with the bowls and sandwiches, we care about their appearance.

Is the blue egg too old?

The bright white egg white and deep yellow yolk stand out beautifully among the vegetables and sausages. Sometimes it happens that after cutting the egg, we discover an inappropriate blue or greenish-gray color at the interface between white and yellow. It forms a kind of unsightly ring around the yolk.

Where did she come from? Doesn’t her presence mean that the egg is past its prime? Was it simply not very fresh? Or is it some kind of fungus?

Or is it just overcooked?

We can put your mind at ease. Although this color strip is not very attractive, it is certainly not objectionable. Basically, it is created by a chemical reaction where the sulfur from the egg white reacts with the iron from the yolk.

The result of this reaction is then iron sulfide, which transparently separates the two parts with a green color. This reaction is most often caused by overcooking. But it can also occur if the water in which you cook the eggs contains a lot of iron. For example, when the iron contains the dishes you use.

If you make a spread from the eggs or cut them into salads, this special coloring does not have to bother you. However, if you are preparing sandwiches or other cold cuisine treats for a celebration, you may regret that the yellow-green-white egg spoils your impression.

On the other hand, this phenomenon means that the egg is really well cooked. That it reached the required temperature in all its parts and no salmonella type pathogens could survive this process.

Watch the cooking time

Preventing this phenomenon is very simple. Watch the time the eggs spend cooking in the pot. 8-10 minutes of boiling is ideal, depending on their size. Cool them immediately after removing. For example, transfer them to a bowl of ice water and ice until completely cold.

A green ring simply means that the egg has been cooked too long. In the process, the meat dries out, the rice burns and the egg yolks turn green.

Treat yourself to a few a day

Eggs are a frequent and popular part of our menus. Because of their cholesterol content, it used to be said that we should not overdo it with their consumption. But most people can eat a few eggs a day without it affecting their own cholesterol in any way.
