What program for the Dijon fair 2022?

The international and gastronomic fair of Dijon opens its doors from 1 to 13 November. For this 92nd edition, many activities are planned to fill the 13 days of celebration.

Tuesday 1is November: day of young chefs representative of the youth gastronomic scene of Dijon

There will be three young cooks on site. They will be Maxime Victorin, chef of the restaurant Le Malto in Dijon or Charlélie Clerget of the restaurant La Musarde in Hauteville-lès-dijon but also the chef Hugo Schneider of the restaurant in Dijon La Beetave.

Wednesday 2 November: Day of the Maison Loiseau

This day will begin with the “master class” of chef Patrick Berton of Maison Loiseau de Saulieu, for the event various tastings and demonstrations will be set up. We will also find the new chef of the restaurant, Jean-Bruno Gosse or the pastry chef of the same structure, Xavier Jacquin.

Thursday 3 November: day of “responsible cooking”.

This Thursday 3 November will be full of novelties because the theme will be “my zero waste kitchen”. The goal: to learn not to waste any ingredient in the preparation of a dish. Workshops and tastings will help to understand this zero waste culinary world. Finally, the second novelty of the day will be the arrival of the Banque Alimentaire de Bourgogne, which will propose its products for a unique laboratory. Six beneficiaries of the association will come to prepare the dishes with the products of the structure, all accompanied by the Amicale des chefs de Côte-d’Or.

Friday 4th November: first night

For this first night a children’s workshop will be set up for Halloween, Muriel Arcos of “Cakes in the City” will offer it for free and upon registration. Then from 5pm to 7pm, Monsieur Moutarde, a bar in Dijon, will offer a mixology workshop with tastings at the end. Finally, a marbled ham competition will also be organized at the fair by the brotherhood of the knights of Sant’Antonio.

Saturday 5 November: day of the Côte-d’Or Chefs’ Association

For this first Saturday of the Dijon fair, the evening will be dedicated to friendly cooks, throughout the day numerous workshops, demonstrations and tastings will be offered to the public.

Sunday 6 November: presence of the actress Laëtitia Milot

On Sunday 6 November, actress Laëtitia Milot, known for her role in “Plus belle la vie”, will be present to make the famous Gaston Gérard chicken recipe with starred chef Stéphane Debord. For the occasion there will be dedications with the public.

Monday 7 November: the Grand Prix national de la gourmandise

For this day, your eyes will be turned to the art of baking, pastry and chocolate. The 49th edition of the professional pastry / chocolate competition will obviously take place, but that’s not all. There will also be the croquembouche competition (the croquembouche is an assembly of crispy pastries made from puff pastry, custard and caramel) but also the professional bakery competition.

Tuesday 8 November: Day of the Dijon Métropole vocational school

The day of 8 November will mainly be aimed at highlighting the various professional sections of the Dijon Métropole school of trades. Various specialties will then follow each other on the stage of the chefs to demonstrate their qualities in their profession. There is also a competition. It is not a culinary competition but a test of preparation of the dining room. For the occasion, the school of trades, the hotel school of the Saint-Bénigne high school and the Le Castel high school will compete to highlight their know-how.

Wednesday 9 November: Young Hopes competition

Wednesday 9 November will vibrate with the Young Hopes competition. This professional event is made to highlight the young hopes of the local cuisine. Young people between 18 and 26 years old will compete during this activity organized by the Amicale des chefs de Côte-d’Or. There will also be a parade of the various brotherhoods present at the international and gastronomic fair in Dijon.

Thursday 10 November: day of hunting and game

This animation is proposed by the departmental federation of hunters of the Côte-d’Or, which through a partnership with the friendly cooks of the Côte-d’Or and the professions of the mouth will organize the 11th edition of the hunting and game day. A way to bring the world of the game to the plate of the visitors of the 4th fair in France.

Friday 11 November: contest for a Hawaiian recipe

For the final of the Dijon fair, Friday 11 November is the last night of the event. The activities will begin at 2 pm, with one of the novelties brought by the president of the Amicale des chefs de Côte-d’Or, Daniel Blanchard: the Poke d’Or competition. This animation for amateur chefs aims to put on the plate a dish in vogue today, the Poke Ball, a typical dish of Hawaii. It will last until 19:00. The second activity, finally, will respond to that of the previous Friday, with a new mixology workshop presented by the Monsieur Moutarde bar.

Saturday 12 November: day of regional products

The locality at the center of the activity, three chefs from the region will come to decline ingredients produced and from Burgundy Franche-Comté with original recipes. A desire to enhance the place that must highlight the talents of our territory.

Sunday 13th November: a sweet ending

To close the international and gastronomic fair of Dijon 2022, the animations will be varied. Between exhibitions and tastings, a new workshop for children will take place in the morning. But the heart of the day will not be there, but more on the 2nd edition of the “Tartes no Limit” competition, which will award the best pastry in the form of a cake. The productions will then be judged by the confectioner Pierre Hubert, a professional from Dijon.

The presence of the Vinidivio wine competition from Thursday 10 November to Sunday 13, in support of the theme of wine present at the fair in 2022, is worth noting.
