Chasselas de Moissac AOP the jewel of the start of the school year

The first fruit to obtain the AOC in 1971, Chasselas de Moissac is no longer just an exceptional table grape. The Chasselas de Moissac AOP is the most precious table grape. Winter is a season that holds many surprises in the heart of Quercy, and reveals a specialty nicknamed the black diamond, which the best chefs in the world are tearing up … the tuber melanosporum truffle! Quercy truffles are harvested from November to March and can be found in Caussade, at the Monday morning market or at Maison Gaillard.

Cultivated in Quercy since the Middle Ages, saffron production reached its peak from the 15th to the 18th century.

In recent years, the cultivation of Quercy saffron has been revived. Saffron is a perennial plant 20 to 40 cm tall with purple flowers. Separated and dried, it is these pistils that constitute the famous red gold.
