In Brooklyn, “L’Appartement 4F” sells a specialty unique to New York: “cereal croissants”, an original sweet sold at a golden price: 50 dollars a box. For Gautier Coiffard, who owns the bakery, these prices are justified by meticulous preparation: “It’s the same dough we have for our croissants. So that’s already two or three days of making the croissant dough. It’s rolled, it’s like a classic croissant. And then we flatten it very finely, we roll the mini croissants one by one, so it takes hours. Then we cook them, we add sugar, and then we dehydrate them, so that’s about two days in addition to a classic croissant”. For Kat Sandoval, a client, the price is not a deterrent: “The price is a bit high but it’s unique, you can’t really find that elsewhere”.

New Yorkers line up in front of the establishment every day, like Alyssa Ryncarz, who arrived at dawn in front of the pastry shop: “We arrived here at 5:45 a.m. in our car and the line of waiting outside started at 6.30am so we’ve been there for about an hour”.
