After gaining momentum at Saturne in Paris then Sépia in Marseille, Victor Sauzay finally took the plunge and opened his Plongeon. A ricochet from the InterContinental, we play the crayfish on the full UV terrace while delighting in the best of the stalls of the Old Port and the arrivals of Ethical Meats, cooked with skill and washed down with real jus de maitre queux. For example, on this scorching evening: cubes of Mediterranean bonito with an exceptional melt-in-the-mouth flavor, garnished with crunchy green beans, cherries and fresh almonds – a nod to Sven Chartier’s mythical dish at Saturne; loin of free-range pork roasted over embers, with coco beans cooked in capitals, tomato chutney, Marseille peppers and deep jus; before a chocolate tart boosted with Espelette pepper and crunchy praline, which put us on the floor for good. // Gwen Jaquere
