Speaking of foods that raise blood sugar, it should immediately be noted: in most cases, the parameters of the product strongly depend on how it was prepared.
Let’s take for example Potato. In its raw form, the root vegetable has a GI of only 30 – and that’s very low. But when was the last time you ate a raw potato for dinner? By the way, it is better not to eat raw potatoes.
The most harmful option is french fries – such a dish has a GI of 97 units, which is almost the same as glucose in its pure form. The fact is that when you fry potatoes, the starch contained in it disappears – the dish turns into a source of fast carbohydrates.
The glycemic index of mashed potatoes is 83, boiled and baked potatoes are 80-85. Already better, but still quite performing. Therefore, if you are already prone to diabetes or if you follow your figure, do not overdo the potatoes.
