Reminders on the listeriosis :
The bacteria Listeria monocytogenes, is found in food, soil, plants, wastewater and elsewhere in nature. It is resistant to cold and can multiply even at cold temperatures (between + 2 ° C and 4 ° C).
People can get listeriosis from eating meat, fish, dairy products, plants or vegetables that are contaminated with the bacteria. Ingesting contaminated food can cause some high-risk groups (pregnant women and their unborn or newborn babies, people over the age of 65, and people with weakened immune systems) to a serious illness called listeriosis.
After an incubation lasting from a few days to 2 months (which makes it difficult to find the source of contamination), the disease usually results in a more or less high fever accompanied by headaches and, sometimes, digestive disorders ( nausea, diarrhea, vomiting…). Neurological complications (meningitis, encephalitis) can occur and be life-threatening.
In the particular case of listeriosis in pregnant women, the infection may go unnoticed or reduce to a flu-like episode. However, the consequences can be serious for the unborn child: abortion, premature delivery, septicaemic forms with respiratory distress in the days following the birth.
In general, the precautions to be taken for the prevention of listeriosis in pregnant women, immunocompromised patients and the elderly are as follows:
a) Foods to Avoid :
- avoid the consumption of soft cheeses made from raw milk;
- remove the rind from cheeses before consumption;
- avoid the consumption of cheeses sold grated;
- avoid the consumption of smoked fish;
- avoid consuming raw sprouted seeds (soybeans, alfalfa, etc.);
- avoid the consumption of cooked charcuterie products eaten as they are; eg: pâté, rillettes, jelly products, cooked ham;
- if purchased, prefer prepackaged products and consume them quickly;
- avoid the consumption of raw charcuterie products eaten as they are, cook them before consumption, eg: bacon, bacon, raw ham;
- avoid the consumption of products purchased from the catering department;
- avoid the consumption of raw shellfish, surimi, tarama.
b) Hygiene rules to be observed :
- carefully cook raw food of animal origin (meat, fish); in particular the ground beef must be cooked through;
- wash the raw vegetables and aromatic herbs thoroughly;
- keep raw foods (meat, vegetables, etc.) separate from cooked or ready-to-eat foods;
- after handling uncooked food wash hands and clean kitchen utensils that have been in contact with these foods;
- clean your refrigerator frequently and then disinfect your refrigerator with bleach;
- leftover food and ready-made meals must be carefully reheated before immediate consumption.
