Melisa explained that rice mostly consists of carbohydrates, which account for almost 80 percent of its total dry weight. Most of the carbohydrates in rice are starch which is the most common form of complex carbohydrate in food.

Apart from that, rice also contains other nutrients such as fiber, protein, fat, but in limited quantities. The standard is one serving portion white rice can contain at least 100 grams of rice. “Therefore, people with diabetes are advised to limit their consumption of white rice because it can increase blood sugar levels,” said Melisa.

Melisa explained that rice served hot contains high levels of carbohydrates because the sugar contained in it is easily broken down and absorbed by the digestive system. As a result, it can cause a spike in blood sugar after eating.

“This does not mean that the sugar content in cold rice decreases. The temperature of the rice has no effect on the sugar content in it, but rice that is cooled before consumption is known to produce a substance called resistant starch.”

Resistant starch is a type of fiber that is not digested by the body, so it is not absorbed by the body. This substance can also be fermented by the large intestine and then used as food for the good bacteria in the intestine.

This fermentation process can increase insulin sensitivity and reduce belly fat, which is good for people with diabetes. This resistant starch is usually found in carbohydrates that are cooked and then cooled, one of which is cold rice.

In fact, more resistant starch was found in rice that was reheated after previously being cooled. Apart from that, cold rice that is reheated will also experience a decrease in nutritional content, including lower carbohydrate levels when compared to freshly cooked rice.
