Laura Martinez (Ma Biche sur le Toit) and Romain Brard (Genty Magre) were both honored in the Occitanie 2021 edition of Gault & Millau.
On Monday evening, the Occitanie edition of Gault & Millau, held at the Hôtel de la Cité in Carcassone and sponsored by the three-star chef from Aude, Gilles Goujon, rewarded two restaurateurs from Toulouse. At only 23 years old, Laura Martinez, head chef in charge of catering at My Doe on the Roof, has just received by Gault & Millau, the Young Talent Service in Room Trophy 2021 for the Occitanie Region. Moved, she is also proud of this award: “I am happy for the team around me,” she explains. Especially since I am self-taught in this profession, since I studied international business to lead me in events ”. Laura signed a permanent contract at Ma Biche at the end of a summer internship at l’Envol. “I already knew the group, I did not hesitate”.
Today, Gault & Millau also values and rewards the dining room professions: “this is an essential aspect of service,” remarks Laura Martinez. The originality, the simplicity of a table contribute to the reception of the customer and to the image of the establishment ”. The guide praised his professionalism and his constant good humor.
“The elders are holding on”
Another award-winning restaurateur: Romain Brard from Genty Magre and recently responsible for the Monsieur Saucisse sandwich shop, rue des Tourneurs. If this chef is in the mood, he appreciates having received the Trophée Cuisine Tradition d’Aujourd’hui. “I’ve been in Toulouse’s culinary landscape for quite a few years,” he admits, “but this award is recognition that I never tire of. It is also a response to the gastronomic and local cuisine, offered to my customers ”. This restaurateur, honored in 2009 by Gault & Millau with the Young Talent title, “knows, according to the guide, how to do well with good products in a register that is certainly classic but always evolving”. A prize according to Romain Brard, intergenerational who also puts the “old” in the spotlight.
