Pastries are highlighted on the marble display. It must be said that the New York Rolls are the heyday of the “EK Patisserie” shop in Les Carmes. Since they went on sale in September, customers have been buying them. Every week, the shop sells nearly 500.

The round viennoiserie, made popular by social networks, consists of a croissant dough filled with a cream and decorated with icing. But Egleh Menossi, the manager, didn’t discover her on Tiktok, unlike most of her clients. It was on a trip to New York that she noticed her. “Tasting it, I realized it was a good idea to import it, says the pastry chef. In Toulouse, no other shop sells it, it seems to me.”

Every week, from Thursday to Sunday, “EK Patisserie” is stormed. “It is not unusual for us to run out of stock before Sunday. Many of our customers call us to reserve New York Rolls,” smiles Egleh Menossi.

For this success with multiple flavors (chocolate, vanilla, pistachio…), you have to pay five euros. Amanda, a 17-year-old customer, brags about her bakery to her mother, who eventually gives up. “A girl I follow on social networks advertised this pastry. Going there, I saw that there were New York Rolls. It’s a nice discovery!”, she testifies.

The Viennese patisserie also delivered an extraordinary publicity stunt for the shop. Attendance increases as the weeks go by. The manager of “EK Patisserie” explains: “Some customers come just to taste it but when they come on Tuesdays or Wednesdays, days when we don’t offer it, they fall back on other patisseries”.

After finding the recipe for success, Egleh Menossi is working on new flavors for the star viennoiserie.
