Top Recipe: Surfish Bistro Peruvian Restaurant

This week, we interviewed Miguel Aguilar, from the Surfish Bistro restaurant in Brooklyn, who made a live recipe for us to share with everyone who loves this diverse cuisine, which is characterized by a mixture of indigenous, African, European and Asian influences.

“Hello everyone, I’m chef Miguel Aguilar from Surfish Bistro, and this is one of my favorite dishes which is the Nikkei Cause, here at Surfish Bistro.

For this dish you need potatoes, avocado, fresh pear, yellow chili, basic! Lemon juice, mayonnaise, we have rocoto mayonnaise, soy sauce, ponzu and sesame oil, sesame oil.

We also have a hash here that we call the famous “Chalaquita”, it’s a hash of red onion, tomato and a few cucumbers.

Ceviche is the favorite dishes of people in Peru and in the world, it is our signature dish as well as lomo saltado. But I think that the reason comes after those two dishes and that it is a very versatile dish and we use the famous potatoes.

Okay until we have the potatoes. And we press them, we press them.

We opened Surfish restaurant in 2011 or less and started in a very small restaurant on 5th Avenue.

Surfish, why did I name it Surfish? Because I come from the south, I am Peruvian and I like fish, I like ceviche, everything that comes from the sea, so the word is south and Surfish together.

Surffish is basically me, it represents me, in my surfing, in my cooking it represents Peru, where I’m from, I’m from Callao de la Punta.

I’ve been cooking for over 25 years, I learned from Bobby Flay, at Mesa Grill that’s where I started cooking.

We are going to put the puree in different places.

Peruvian food is a melting pot, right? and it is very mixed. We have Italians who came, we have Japanese, we have Chinese, …, it is very complete.

Give me both caviar ok?

What I want for my people, my neighborhood, right?, my neighbors who sometimes don’t have time, or haven’t traveled to Peru, is to be able to come here and try a little bit of Peru because I go to represent that in Brooklyn, a little piece of “Peru in Brooklyn.”
