Then follow a langoustine ballotine, a coral lentil risotto, a bao bread with pigeon stuffing and cabbage as well as a pigeon fillet accompanied by parsnip and coffee mousseline and a chocolate dessert to round it all off. “For lovers’ celebration, Mama prepares her most refined dishes for you”: at Mama Shelter in Toulouse, the special Valentine’s Day menu will be 69 euros per person. On the program: foie gras with Espelette pepper, Guinea fowl supreme with frozen forgotten vegetables or creamy risotto with parmesan and mushrooms and raspberry/lychee cabbage to share.
