Toast sunny side up, without egg

This recipe comes from the book Family. Eat. Plant. by culinary authors Lisette Kreischer and Maartje Borst, in which they create family-sized vegan recipes. So it’s not eggs on toast, but peaches (or apricots) with a nice cheesy sauce. You put the topped toast in the oven, so that they are ready at the same time and you don’t have to wait for each other.

1. Preheat the oven to 220 ºC.

2. Place the slices of white bread on a baking tray. Place the cheese and oat milk in a saucepan and heat until the grated cheese melts into the milk.

3. If desired, place a slice of vegan ham on each slice of bread. Spoon the cheese sauce onto the bread and place one peach or two apricots per sandwich. Sprinkle with some thyme or oregano and freshly ground pepper.

4. Bake the toast in the oven for about 10 minutes until crispy. Check the condition of the toast after 10 minutes. If necessary, extend the baking time by 5 minutes.

Keep the taste pure by just making the cheese sauce and topping the toast with the sauce and peaches, or you can make it a party by adding (vegan) ham.
