The main characteristic of these quesadillas is the way they bend, which conditions the placement of your fillings. We have used Mexican wheat tortillas, but they can also be made with crepes, pita-type flatbreads or with special tortillas for wraps.
For each and every one of them, we divide the omelette into four imaginary segments. In each “segment” we place one of the ingredients that forms the filling. But before we do a cut from the center to the end, that is, we cut the radius of the circumference.
The next thing is to fold each of the “segments” over the other until you get a triangle. You have to be careful of do not overload the filler so that it does not come off, although it is not advisable to fall short. Once this is done, it only remains to mark the quesadillas on both sides in a pan over medium heat and ready to enjoy.
Lacón, pesto and blue cheese
We spread pesto sauce on one of the imaginary segments of our wheat tortilla. Chop three or four dried tomatoes in oil (well drained) and place them in the second segment. We cover the third with slices of ham and, finally, we spread cream cheese and blue cheese on the fourth. Fold and mark over medium heat in the pan, as mentioned above.
Peppers, avocado and mozzarella
We start from the basis that the peppers are sautéed and seasoned with seasoning for fajitas or similar. We place these on one of the quarters of the tortilla, we extend refito beans on the second quarter, avocado slices on the third (we could also put guacamole) and grated mozzarella in the last. We fold the pan to brown on both sides.
Strawberries, chocolate and mascarpone
We slice two or three beautiful strawberries or strawberries and place them in one of the quarters of the tortilla. In the others we place cookie pieces (the ones you like the most), dark chocolate pieces and mascarpone cheese. Fold and brown over low heat On both sides in a skillet or griddle.
