PARIS, AYOBANDUNG.COM – An Pizza restaurant in Paris, France, uses robotic technology to operate an entire pizza production from start to finish.
The restaurant is named Pazzi Pizzeria or commonly called Pazziria, featuring a robot that operates from making and flattening pizza dough, placing tomato sauce, to putting it in and out of the oven.
Reported by the Singularity Hub page, Sunday, July 18, 2021, the show begins with a robot picking up a handful of dough and placing it on a pan.
Then another robot is in charge of flattening the dough and the other is applying spices such as tomato sauce.
From picking up the dough to putting it in the oven, the robot only takes 45 seconds.
This oven can also bake six pizzas at once which is capable of producing about 80 pizzas per hour.
Once the pizza is perfectly cooked, the robot then cuts it and places it in a box.
Afterwards, the pizza will be moved to a place where customers can pick it up.
The restaurant manager said it took him eight years to research and develop a pizza-making robot.
He admits the hardest part is how to make the robot work effectively when processing raw dough.
This is difficult because pizza is made with yeast which makes the dough sensitive to changes in temperature, humidity, and other factors.
For optimal results, the dough also needs to be rolled and baked at the right time.
“The process is very fast, the timing is perfect, and the quality is guaranteed because the robots are consistent,” says Pazzi co-founder Sebastien Roverso.
He added, there are technicians who monitor the performance of the robot remotely.
When a robot has a problem, they can immediately contact a technician to fix it.
Pizza prices at Pazzi are the same as restaurants in general, starting from 7-14 euros or Rp. 119,000-239,000 per pizza for one to two people.
Pazzi restaurant just opened this month. They plan to expand the concept of this robot by opening a branch in Switzerland starting next year.
This isn’t the first time a restaurant has used robots to make pizza. Four years ago, the Zume Pizza restaurant in California, USA also used robots to make pizza.
