The Xbox Series X OS takes up perhaps 198 GB

When you turn on the Xbox Series X later, about 198 GB on the 1 TB hard drive may already be used for the operating system.

This is evident from one gamespot article, where the Xbox Series X has been extensively tested. After installing the OS and various files that are required, there is 198 GB less disk space available on the SSD disk. There is therefore about 802 GB left for installing games.

It should be noted, however, that the Xbox Series X owned by Gamespot is not yet the consumer version – so it is possible that the above sizes may ultimately differ for consumers.

The Xbox Series X and Series S will be released on November 10th. The Series S has 512 GB of onboard disk space. Both consoles can be expanded with external hard drives.
