It’s surprising, but sirloin steak is still very popular in the Czech Republic, even though it is an old dish of our grandmothers and today the trends are somewhere completely different. That this dish would have some correct nutritional values and that it would be appropriate to have it for lunch and then go back to work is definitely not something to talk about.
It needs care
Nevertheless, people still like tenderloin sauce very much. Unfortunately, they still prepare it the old way, as it was done some 200 years ago. Today’s tastes are already more refined, so we need to think about how we prepare this dish.
The chef Zdeněk Pohlreich spoke not very flatteringly about sirloin in the past, but in the end he took it to heart and started offering it here and there in his establishments. He does not make it according to the original recipes, but goes with the times and adds interesting ingredients to the dish. Then it tastes much better and can withstand competition with other foods.
Unfortunately, the Czechs still don’t hear about it and forget to add an important ingredient to the sirloin. It is nothing more than mustard, which literally works wonders with food. Thanks to it, the tenderloin is more distinctive and also has a softer taste. Answer the question yourself whether you add this food to the sauce.

What all needs to be added
However, that is not all. According to Pohlreich, the right mix of spices must also be added to the tenderloin. You mustn’t forget allspice, bay leaf and black pepper. Only in this way will you achieve a truly interesting taste and not create just another dumpling slurry, as is often the case with sirloin in Czech households.
You might think that anyone can handle sirloin, but at a certain level it becomes quite a complex dish. Anyone can pull it off, but very few can do it right. It is also about how you take care of the meat. This is because you need to pierce it properly and then stew the vegetables well.

According to the chef, sirloin steak cannot be made without the best ingredients. People tend to buy the cheapest beef in the supermarket and then try to do something with it. But that will never work. For a good piece of beef, go to the butcher. The quality of the vegetables is also surprisingly important, so get them ideally somewhere that sells them straight from the yard.
