The cheapest sausages, hamburgers and salamis are made from a substance called separate. In addition, manufacturers have a very decent margin for selling them.

“Chicken offal is actually waste meat. It is made by taking chickens in some, especially large companies, trimming the meat from the thighs and breasts and cutting off the wings. The remaining skeletons, which have very little meat left on them, are put into the machine, compressed and driven through the machine under enormous pressure. In fact, only a part of completely bare bones will remain. Everything else, such as cartilage, is subsequently ground into ‘some kind of mass’. This product does not only contain animal protein, but also calcium from bones,” explained Martin Čejka to our editors. After the pressure separation of the skeletons, the next phase occurs.

“They then add stabilizers, some natural dyes, spices, glutamates and the like to this substance. This is then put into the cheapest salamis, sausages and hamburgers. For example, if a kilo of separates costs 25 crowns per kilo, then they have a big margin on sausages, for example. If customers don’t want to consume something like that, so that they don’t get lumps of gristle in their teeth, they should pay attention to the price of sausage when buying. Above all, they should never forget to check the composition of the product and make sure what percentage of meat it actually contains,” concluded Martin Čejka.
