The reverse steak tastes much better than the classic one. But few people can do it well

Would you like to enjoy juicy steaks? Classic cutlets are a staple in Czech kitchens, but they are sometimes dry and lack juiciness. If you prepare them upside down, you will be pleasantly surprised. Try making them special and instead of the classic one, try a variant where they are first wrapped in breadcrumbs and then in an egg.

Reverse cutouts

Everyone knows the classic triple pack: flour, egg, breadcrumbs. For the upside-down cutlets, on the other hand, the flour is completely omitted. The cuttings are therefore juicy, less greasy and, if you follow the correct procedure, much tastier.

What will you need?

For the reverse cutlets, prepare:

  • 4 pieces of pork chop or neck
  • 4 slices of English bacon
  • 4 tablespoons of breadcrumbs
  • Onions
  • 2 eggs
  • Oil, salt

How about that?

Preheat the oven to 180°. Wash and dry the individual slices of meat, salt them and sprinkle them with breadcrumbs. Place them in cling film and tap them lightly with a hammer on both sides. Break the eggs into a bowl and beat them with two tablespoons of water. Meanwhile, heat the oil in a pan. Dip the meat in the egg and immediately put it in the hot oil. Fry it on both sides until golden brown, then remove it from the pan and let it rest. Peel and chop the onion and put it in the pan alternating with the meat – on top of the meat, onion, meat, onion and bacon.

Put the cutlets in the oven and bake for 40 minutes, preferably covered with foil. In the meantime, you can prepare a side dish according to your taste: potatoes or mashed potatoes are perfect. After 40 minutes, remove the foil and pour the sterilized vegetables and marinade over the cutlets. Leave to cook for 20 minutes and you can serve.

Try a change

If you want a change, you can cover the steaks in the oven with whipping cream or stock. The taste will soak into the meat and they will taste a little different. Most importantly, though, they’re a little healthier than the classic three-pack steaks.
