The recipes from October 14th to 18th

For “Silvia cooks” we go on a journey of discovery through the kitchens, cooking pots and restaurants of our federal states every week on weekdays at 2 p.m. on ORF 2.

With guest chef Karin Kaufmann

Karin Kaufmann got her passion for cooking from her mother. Even as a child, she enjoyed looking into the pots and learned one or two tricks from her mother for preparing food. Karin Kaufmann prefers clear cuisine with fresh ingredients without “frills and frills”. You should see that it is homemade. For her, cooking is a craft. “You have to feel with your hands what it feels like.”

Her cuisine is seasonal and regional. She only makes an exception for spices if they have a unique aroma. To make the search for fine spices easier, Karin Kaufmann founded the spice workshop in Egg. The numerous spices are used in her cooking school.

On the road in the Bregenz Forest

The morning atmosphere at the Diedamskopf welcomes Silvia, who enjoys a wonderful view of the country and the mountains from here. Stefan Bereuter is already waiting for Silvia to prepare two typical local dishes with her.

Before we start cooking, Silvia has to get some cheese, but it can be picked up in the valley. Lukas Ratz has the perfect means of transport. With a paraglide umbrella you go out into the air and down into the valley.

Landing after the adventure flight directly in Schoppernau. Silvia gets the cheese for the spicy Riebel from the local cheese dairy. The gondola takes you back to the Diedamskopf.

The Riebel is available in two versions – one spicy and one sweet, and homemade applesauce is also prepared with it.
