The Link Between Fructose and Fatty Liver Disease: Findings from PhD Candidate Amée Buziau

PhD candidate Amée Buziau seems to have proven that the processing of fructose leads to fatty liver disease. Fructose is found in soft drinks, but also in fruit and fruit juices. The liver converts fructose into fat and if we eat too much fructose, the fat accumulates in the liver, turns out from the investigation.

It was already clear that there was a link between fructose and fatty liver disease. It was not clear whether this was causal. To demonstrate this, research was done on people who do not convert fructose into fat, but excrete it through the urine. These people suffer from the (harmless) condition fructosurie. The subjects in this group appeared to be at less risk of fatty liver disease and related conditions than the control group consisting of people without that condition. “Because the congenital predisposition is due to chance and the groups do not differ from each other, we can use this comparison to say that fructose is indeed the cause of fatty liver disease,” says Buziau.

Research into participants The Maastricht Study showed that fructose from soft drinks and fruit juice is mainly the culprit. Fructose from fruit does not appear to be related to liver fat.

According to Buziau, fruit juice is unhealthy. She also advocates a sugar tax so that people consume less fructose from soft drinks. Other measures such as removing soft drink vending machines from schools are also important. “To win the battle against the fructose epidemic, we need a comprehensive approach,” Buziau concludes.
