The History and Recipe of Corn Sticks: A Delicious Delicacy from the USSR

Corn sticks in powdered sugar are a delicacy familiar to almost everyone. The sweetness that came from the USSR continues to win the love of children and adults and has not lost its popularity over the years.

The popular sweet first appeared in the USSR in 1963. The first corn sticks were produced by the Dnepropetrovsk food concentrate plant, and the technology for their preparation was invented by the director of the plant, V. Ya. Krikunov. In the early 60s, Krikunov visited the United States, where he got acquainted with the American experience in corn processing. Upon arrival in the USSR, Krikunov assembled a phenomenal apparatus that formed corn sticks from raw materials.

By the time the USSR collapsed, corn sticks were already being made everywhere. They also made the classic version, and carried out numerous experiments, changing the shape, taste, and even adding filling to the sticks. In shops and markets they were sold in huge bags, which could not but please children with a sweet tooth.

Nowadays, corn sticks can be found in any grocery store, and there are an enviable variety of industries producing this delicacy.

You can make corn sticks at home. Of course, it is unlikely that it will be possible to replicate the technology of food factories, but homemade sticks can be made much healthier by preparing them from natural ingredients and the absence of flavor enhancers and preservatives.

Milk – 120 milliliters Butter – 80 grams Corn flour – 150 grams Salt – a pinch Eggs – 2 pieces Powdered sugar

Preparation

Cut the butter into small cubes of equal size and place in a saucepan. Add milk to it and place on medium heat. Bring to a boil, stirring constantly. Once it boils, reduce the heat to low and gradually stir in the corn flour. Cook the entire contents of the pan for about 5 minutes, then remove from the heat and let cool. When the future dough has cooled to room temperature, add a pinch of salt and eggs to it. Mix thoroughly to obtain a homogeneous mass. Transfer the dough into a pastry bag. Its most popular alternative is a regular bag with a corner cut off. Squeeze the dough onto parchment paper in the form of sticks of the desired size and place in an oven preheated to 160 degrees for 25-30 minutes so that they do not burn. If you don’t have an oven, you can cook corn sticks and in the microwave. To do this, put them in the oven for 5 minutes at medium power. When ready, let the sticks cool and sprinkle them with powdered sugar.
