Is smoked meat harmful?

Smoke itself is a source of pollutants. Harmful substances are formed when meat is cooked at very high temperatures, called polycyclic aromatic hydrocarbons known as “PAHs” and heterocyclic amines “HCAs.” Studies show that smoking leads to higher levels of pollution. During the smoking process, smoke produces these substances and carries them to the surface of the meat. Liquids and fats from the meat fall onto the heat source.
