The generations follow one another and the ritual of the atria continues. A few days before Christmas, the ingredients for the dough are ready: flour, eggs, butter, salt and sugar, not to mention orange blossom and rum.
Everything will be to respect the order of the addition of each element of this dough which will rest near a hot point for a few hours. Direction the family home, where a warm log fire awaits. The pan, the oil, the tripod are ready to cook the atria over a wood fire.
And some elbow grease will be needed to stretch the atria, one by one, to obtain a very fine piece that will simply go back and forth in the very hot oil of the pan. The fire must be maintained regularly so that these “wonders” cook at the same temperature. Real assembly line work is required from stretching to sugaring.
From Christmas on, there is always a dish of atria on the table so that all who pass by can have a taste.
