“Zelta ritmi” is a festival especially dedicated to the older generation, organized by the parents group “Mammamuntetiem.lv”. Zucchini salad with garlic and greens

I used courgettes for the winter when I was cooking lecho, but this year the tomatoes are late to prepare, and the sweet peppers haven’t grown either. However, courgettes are in abundance. That’s why I tried to put zucchini in a salad for the first time this year – a recipe with greens and a good dose of garlic.

Ingredients:

  • 1.5 kg of zucchini
  • 125 ml of oil
  • 80 grams of sugar
  • 1.5 tablespoons of salt
  • 80 ml of 9% vinegar
  • 2-3 heads (not cloves) garlic
  • Sweet bun with greens (dill, parsley)

Preparation

  1. I cut the peeled courgettes into half rings that were not too thick, without the flesh inside the seeds, and put them in a bowl.
  2. I add chopped greens, garlic and everything else.
  3. Leave it covered overnight or for at least eight hours.
  4. Then I put them in sterilized jars and sterilize them about 15 minutes after heating the water.

He thoroughly enjoyed every taste.

Sweet courgette salad with citric acid

In the second recipe, I tried using courgettes instead of pumpkins, and it turned out really well – you can’t tell if they are courgettes or pumpkins.

Ingredients:

  • 2.5 kg of courgettes (or pumpkins) – peeled, cut into cubes
  • 2.5 liters of water
  • cloves, spices, cinnamon bark
  • 500-600 grams of sugar
  • 25-30 grams of citric acid

Preparation

  1. I pour water into the pot, add cloves, spices, cinnamon peels, sugar and citric acid.
  2. I boil everything, cook it a little and add the chopped courgettes or pumpkins.
  3. Cook for about 20-30 minutes until the pieces are transparent.
  4. I put them in sterilized jars, cover them and put them in the refrigerator after they cool.

This sweet salad does not last long, it should be eaten within about two weeks. I like it very much, I also eat it with meat dishes.
