Darío Vidal Llisterri was a journalist, writer and gastronomic critic -he also held the position of Minister of Culture and Education of the Government of Aragon in 1987-1988-, in addition to having been a member of the Royal Academy of Nobles and Fine Arts of San Luis and of the Aragonese Academy of Gastronomy. But above all he was a great lover and researcher of Aragonese gastronomy. From his native Alcañiz, in the 1970s he toured all of Aragon collecting traditional recipes, consigning informants and places of origin, and this recipe book is the one that Ismael Ferrer has recovered in all its accuracy and originality.

This Barbastrean, professor of Cooking and Pastry, shows throughout his professional career, both in his teaching and dissemination work, through various publications and his blog alimentadelpresente.com, his connection with the primary sector – not in vain his childhood spent in Capella, in the bosom of a family of farmers–, his commitment to the territory and the study of local food heritage, which has allowed him to support, champion and promote numerous actions to promote the identity and unique gastronomic culture of Aragon. In this sense, this publication is a return to the sources, presenting, without intermediaries, Darío Vidal as the “defender of Aragonese cuisine”.
