The Permakulturhof Ellersbacher is a family business in Stanz in the Mürztal that is over 100 years old. The Schweighofer family farms sustainably, using holistic approaches and in the spirit of permaculture. Young pasture cattle and Carniola stone sheep live on the Schwaighofer family farm. The Styria Beef organic young beef is particularly tender and lean. This comes from the strict requirements that a Styrian organic farmer must meet in order to be able to use this brand name. Particular care is taken to ensure that the animals are kept in a species-appropriate manner and that they receive herbs and grasses from Styrian pastures and alpine pastures. Furthermore, there must be animal-friendly stables with straw lying areas, organic feed from our own farm, no feed additives and keeping the animals in groups is also required. The crowning glory of the products is the farm slaughtering and processing in-house.

The Krainer Steinschaf is one of the oldest surviving Austrian sheep breeds, but is now threatened with extinction. Stefan Schwaighofer is actively committed to preserving this special breed of sheep on his Ellersbacher permaculture farm through breeding and species-appropriate animal husbandry. The Krainer Steinschaf is not suitable for fattening, so it enjoys slow growth in a herd in the wild. This is also where its special quality of meat develops. Finely fibrous, low in fat with a subtle but delicate aroma, it is a high-quality delicacy.

Stefan Schwaighofer’s training in permaculture design always brings the vibrant organic farm in a fresh direction. This means that the whole family can get involved on the farm again and again.
