Consuming salmon is also effective in improving cardiovascular health. [사진=게티이미지뱅크]Salmon is one of the healthiest fish. Studies show that people who eat a lot of salmon are slimmer and more likely to avoid getting sick. But what exactly is in salmon that provides its health benefits is not well known.
A recent study published in The Journal of Nutrition found that when you eat salmon, you consume at least 30 metabolites, which are substances produced during digestion and other chemical processes. Four of these metabolites have been associated with significant improvements in cardiovascular health.
Researchers at the University of Colorado had 41 participants aged 30 to 69 eat a Mediterranean diet that included a variety of fish, lean meat, whole grains, fruits and vegetables. They then performed blood analyzes and other tests to assess how healthy their cardiovascular systems were. The diet included eating salmon twice a week for five weeks, with a one-month break in between. The participants were obese or overweight but did not have an active metabolic disease such as type 2 diabetes. Food samples provided to participants were also analyzed in the laboratory to identify metabolites.
The researchers discovered a total of 1,518 compounds in food, of which 508 were unique to salmon. In particular, increases in two compounds and two other metabolites found in salmon were associated with lower total cholesterol, bad cholesterol and other fats in the blood. Bad cholesterol is a fatty substance that accumulates in blood vessels, damaging them and dramatically increasing the risk of stroke and heart attack.
The researchers said, “We were the first to identify salmon-specific bioactive compounds that increased in plasma after consuming a Mediterranean diet containing salmon. “Furthermore, some of these food-specific compounds were associated with short-term improvements in indicators of cardiometabolic health.”
