Star chef cooks for the patients of the Zeeland hospital

In the coming months, patients at the Admiraal de Ruyter hospital in Goes will be able to opt for a meal prepared by chef Thijs Meliefste, from the Michelin-starred restaurant Meliefste in Wolphaartsdijk. “I wanted to make a dish that you can expect when you are in the rag basket.”

Meals are prepared in the hospital kitchen in Goes. “The level is obviously not the same,” says star chef Meliefste a Zealand transmission. But does it come close to the quality of its starred restaurant? “We tried to make it the best we could with really good flavors.”

The dish consists of fillet of plaice with seafood sauce with a mix of spinach and fennel and brandade of potatoes and celeriac. “I tried to make it a nutritious meal,” says Meliefste, whose restaurant was awarded a star last year. “And if this can be a positive point when you are sick, then my mission has been accomplished.”

The hospital has made few requests to the court, except that it must be healthy, says manager Renske van Ewijk. “It had to contain enough vegetables. We also left it to Thijs Meliefste’s creativity.”

Plaice can be ordered for patients in the hospital starting tomorrow. They don’t have to pay extra for it. If it turns out to be popular, the hospital and Meliefste will want to continue the collaboration and the chef will propose a new dish.

According to the regional broadcaster, the hospital is the first health institution in the Netherlands to partner with a star chef.
