Sergio Barzetti he likes to define himself as an expert cook rather than a chef, and to think that he took this path by chance. Indeed, by mistake, he confessed to Natural cuisine some time ago. The choice of the hotelier fell solely and exclusively because he needed a diploma to follow his true passion, leading horses to trot. Nothing exciting at first: “I also went to the kitchens of large restaurants to observe and learn and at the beginning, as happens to everyone, it was mainly a lot of polishing copper pots and cleaning, peeling, slicing. I am grateful to my teachers for giving me these experiences. Today there is a lot of focus on creativity, but if the foundations are not there it rests on nothing.”
The basics he talks about are, for example, the various cuts of vegetables: “Every chef must know how to make a mirepoix, a brunoise, a julienne, a chifonnade perfectly”. And he explains that the first two are very regular “dice”, the first larger than the second. Just as the chifonnade is similar to the better-known julienne, but the strips are thinner. It is these subtleties that make the difference between an “expert cook” and a simple cooking enthusiast. But then why the goodbye?

To the controversy
As many will know a few weeks ago Sergio Barzetti was overwhelmed by controversy for some sentences uttered during the broadcast It’s always midday. Talking about wine with the hostess and the sommelier, and the confidence that is created in cooking together with your partner with a glass in hand, the chef makes an unhappy exit: “And then go do something important, go stun the prey.” Antonella Clerici he tries to tone it down by admitting that what the man said wasn’t nice, but he sinks by talking about his wife Laura met at a cooking class and remarks: “I was trying to chase her by giving her a drink to stun her but I didn’t know she was a teetotaler.” After the great controversy that arose around these terrible sentences, both the presenter and himself Barzetti they apologized.
