After the meal, a small sip of fruity fruit brandy. This has a long tradition in Bavaria. That is why there are also many small private distilleries in the Isarwinkel. One of them hasn’t been too long.
Sachsenkam – In Sachsenkam, Georg and Thomas Hartmannsegger have only been making their own schnapps and brandies on their farm for four years and, recently, the fashion drink gin. “My first gin was an immediate hit,” says Thomas Hartmannsegger proudly. But it wasn’t much different with the fruit brandies either. He didn’t have to practice, rehearse and taste for a long time. After all, the family has already received a number of awards for their high-proof creations in the short time. Most recently, alongside other spirits manufacturers from the Tölzer Land, at the Bavarian fruit brandy award. There they were awarded once gold and twice silver. The fine distillery Simon from Gaißach and “Edelbrände Schauer” from Oberfischbach also won medals (we reported).
Professional boiler cost: 15,000 euros
“We are lucky that my son Thomas has a very fine and sensitive organ of taste”, explains Georg Hartmannsegger. That is very important for a schnapps distiller. “The funny thing is that he doesn’t like to drink schnapps that often,” the proud father adds with a laugh. The idea of a small distillery arose out of the sheer desire to “just try it out yourself. We had so many rowan berries, ”said the junior burner in an interview with our newspaper. But on closer examination of the profession, they quickly realized: “Such a small boiler makes little sense, in the end far too little comes out.” So father and son invested together. In schnapps distiller training courses and a professional large boiler that is now in a barn in the yard. Cost: around 15,000 euros.
The whole family helps cut the fruit
They kept expanding their hobby. They now have 18 different spirits in their range. Local restaurants have also got a taste for it. “So far we only sell on our farm, and we don’t have an online shop or anything like that. We still want it to remain our hobby or a second mainstay. ”The fun shouldn’t be neglected and anyway:“ We always want to keep the focus on quality instead of quantity, ”says Thomas Hartmannegger. The father-son team, with their love for high-proof, wants to expand a little. “We intend to build a small room as a tasting room on our farm soon, so far everyone has come to our living room to try,” they explain.

Until then, they’ll be busy making more schnapps. Many tons full of fruit mash are already spread out in all barns and garages of the Sachsenkamer Hof. “It’s amazing how much fruit you need for it,” says the senior distiller. Some of the fruit comes from the garden at home, others buy it. As soon as the delivery arrives, the whole family helps out. “You have to look at every pear, every apple individually. If there is a rotten fruit, it can happen that the whole mash is over ”, explains Thomas Hartmannsegger. That’s why they always stand in front of the huge fruit boxes together with the women of the family. For checking, sorting and small cutting. “Only when that is done, the real art of distilling begins.”
