Ammon – Here is how to prepare rice with curry:
the components:
– 5 cups of basmati rice, soaked for at least half an hour.
– 2 cups of peas.
– 2 large onions, finely chopped.
– 2 green peppers, cut into medium cubes.
– 2 red sweet peppers, cut into medium cubes.
– 3 finely chopped tomatoes.
– 8 tablespoons of butter.
– 8 tablespoons of oil.
– 2 tablespoons of curry powder.
– 4 bay leaves.
– 2 medium-sized cinnamon sticks.
– 8 cardamom pods.
– Salt, to taste.
– 6 cups of warm water.
– Pine nuts and toasted almonds for garnish.
How to prepare:
1. Heat the cooking pot, and put oil and butter in it.
2. Add the chopped onions and stir until they wilt and turn golden.
3. Add the green pepper and chopped sweet pepper and stir for several minutes until they become slightly soft.
4. Add the chopped tomatoes and stir the ingredients together until the tomatoes dissolve.
5. Add the curry, cinnamon, bay leaf, and cardamom pods, and stir until the spices are well distributed.
6. Place the soaked and well-washed rice in the pot over the vegetables and stir gently for a minute until the rice is mixed with the rest of the ingredients.
7. Add warm water and stir again gently.
8. Cover the pot and leave it on low heat for ten minutes until the amount of water reduces approximately by half.
9. Add the peas and stir gently until they are distributed with the rice.
10. Cover the pot again and leave it on low heat for twenty-five minutes until the rice is cooked.
11. Turn off the heat under the pot and let the rice cook for a few minutes.
12. Serve the curry rice in a serving dish and garnish with toasted pine nuts and almonds as desired.
