On national holidays, we can make red and white color Latvian dishes. Aina Pitrāne on the “Facebook” page”Scene readyoffers a tasty cookie recipe.
ingredients
For a biscuit
250 g of boiled beets
3 eggs
80 g of corn starch or flour
0.5 teaspoon of salt
1 tablespoon of oil
To be filled
250 g of cottage cheese
2 boiled eggs
150 g lightly salted herring fillets (about 2 pcs.)
3 tablespoons of sour cream
greens (scallion, dill) to taste
2 tablespoons of artificial red caviar
salt, pepper to taste
Preparation
Cookie
- Grate on a fine grater or puree the beets.
- Separate the egg whites from the yolks.
- Add the yolks, oil, salt to the beets and mix well. If you want a brighter color for the cookie, add a little food coloring at this stage.
- Add starch to the beetroot mass and mix well again.
- Add a pinch of salt to the egg whites and whisk until stiff.
- Combine the two masses together. Egg whites are added in parts and thoroughly mixed into the beet mass.
- Bake in a preheated oven at 180° for about 15-20 minutes.
- When the biscuit is ready, turn it over, carefully remove the parchment paper and leave the biscuit to cool.
Filling
- Finely chop the greens.
- Cottage cheese, eggs, herring, cream merge into a homogeneous mass. If necessary, add salt and pepper to taste.
- Add greens, caviar to the curd mass and mix well.
Assemble the cupcakes
- Cut the biscuit into 3 equal parts, put the filling between each layer. Spread the top layers with the same curd mass.
- Leave to infuse in the refrigerator.
- Before serving, the top layer can be smeared with mayonnaise, cut into tartlets, decorated.
“If you don’t want cupcakes, you can put the filling on the cookie, smooth it out, roll it up, and you’ve got a savory roulette. Filling can be added as desired,” says Aina. When it comes to which pan to choose, Aina says, “You can also cook in smaller pans, so the cookie will be slightly denser. With a pan this size, it turned out to be a pretty thin cookie.”
