RECIPE. Gazpacho soup for hot days. Spicy and refreshing!

A refreshing soup of tomatoes and other vegetables that can be served in a bowl or even in a glass, as is customary in Spain.

Ingredients

  • 1200 g of tomatoes
  • 1 paprika
  • 1 hot jalapeño pepper
  • 2 cloves of garlic
  • 1 small purple onion
  • 200 – 300 ml of tomato juice or neutral tomato sauce
  • 2 tablespoons of olive oil
  • 60 ml of red wine vinegar
  • Salt, ground black pepper to taste
  • You can add avocado
  • Sweet and sour apple to taste

Preparation

1․ Cut tomatoes, peppers, white bread with the crust cut off, garlic and onion into pieces. Put everything in a blender cup and grind into a puree.

2․ Beat again with juice or sauce, and then with oil, vinegar, salt and pepper.

3․ Refrigerate for an hour and a half or more.

4․ When serving, add whole pieces of vegetables used for the soup.

You can also add greens and small pieces of avocado or sweet and sour apple.
