Such a hearty potato casserole is somehow always possible. But we are super sure: You have never eaten the classic oven dish like this before! The rappie pie, a Canadian potato casserole, does not contain any cheese – and the tubers are not simply cut into small pieces and slices, they are grated! Add tender chicken breast and the great casserole happiness is complete.
By the way: The Rappie Pie is traditionally native to southwestern Nova Scotia and also parts of Prince Edward Islands. A not inconsiderable proportion of residents who speak Acadian French live here. This is where the name of the special dish comes from – it comes from “Patates Râpées”, which means something like “grated potatoes”.

First, melt butter in a pan. Meanwhile, peel and chop the onions, then sauté in the butter until they turn a nice golden colour.

Meanwhile, put on a large saucepan and heat the chicken broth in it. Dab the chicken breast and cut into pieces – add these to the broth and simmer until the meat is cooked. This should take about 20 minutes. Lift the meat out of the broth with a slotted spoon and set aside. Pick up the broth!

Preheat the oven to 180 degrees circulating air. Peel the potatoes and grate finely with a grater. Place the shavings in a clean cotton kitchen towel and wring out vigorously to extract as much liquid as possible. Place the mashed potatoes in a bowl and season with enough salt and pepper. Pour in a little chicken broth and stir. It should be about the consistency of oatmeal.

Cut the bacon into strips and stir into the potato mixture.

Grease a large casserole dish with some butter. Add half of the potato mixture and spread evenly on the bottom of the dish. Scatter onions on top, followed by the cooked chicken breast. Then add the remaining potatoes as the top layer and spread evenly.

Place the Rappie Pie in the oven and bake for an hour. Sprinkle a ladleful of chicken broth over the casserole from time to time to keep it from drying out. That’s it already! Just enjoy!
