As a child, he imagined himself rather as a hairdresser before finally letting himself be convinced by his pastry parents to take up their torch. Since 1992, established rue de la Vieille-Poissonnerie, Frédéric Lescieux regaled the Valenciennois before taking over from his parents in the “Lescieux house”, on the Place de Raismes, in 1995. A house that the 62-year-old pastry chef did ‘never left, since he has lived there since 1961… In 1997, he also moved to Saint-Amand. Frédéric Lescieux studied for four years in the prestigious Yanka house, in Lille, before returning to his native Valenciennese, whom he likes to highlight through pastries such as Carpeaux, XXL version.
A profession that recruits!
In the kitchen, where he works from 4.30 a.m. to 1 p.m. on weekdays and from 3.30 a.m. on weekends, Frédéric Lescieux is supported by two employees and three apprentices. It must be said that the profession has a future! The bakery is one of the sectors most popular with apprentices, young and old, who are more and more likely to try to retrain in this field. The national bakery and pastry confederation, which Frédéric Lescieux chaired for five years, is launching a call for applications: 9,000 baker positions are to be filled in France! A piece of news that has something to delight the pastry chef who has craftsmanship firmly in place and sufficient energy to continue defending it tooth and nail. Retirement ? ” We give ourselves another 3-4 years… ” Courageous ! “We”, it is he and his wife, Patricia, who has been running the store by his side all this time …
A united pastry chef
The difficult health crisis that is shaking the whole world will at least have had the virtue of changing the consumption patterns of customers. At least for the moment. A return to local commerce and craftsmanship which can only delight Frédéric Lescieux. Proximity, a notion that the pastry chef has always cultivated by committing to causes as important as breast cancer. Each year, in October, the shop is adorned with pink sweets, the profits of which are donated to the Emera association. A gold craftsman, really. Lescieux thus join the great family of 33 certified pastry chefs in Hauts-de-France. A well-deserved distinction. P. B.
