The term plant-based diets includes mixed diets with low meat consumption (flexitarians), pescatarians, ovo-lacto vegetarians (vegetarians) and vegans. Plant-based foods offer a diverse range of nutrient-dense foods. However, avoiding individual foods or food groups can result in not all essential nutrients being supplied in the quantities required, which can lead to the development of nutrient deficiency symptoms in the long term. This article is a continuation of the first part on possible critical nutrients in vegetarian and vegan diets. In addition to information on the physiological effects and intake recommendations, information on the current supply situation and options for meeting the needs of the critical nutrients calcium, iron, zinc, selenium and iodine are included. In addition, suitable laboratory parameters and examination methods are presented.
