Preparation
- Cut the meat into cubes.
- In a large pot, brown the pork cubes in 1 tablespoon olive oil (does not need to be fully cooked). Remove from the pot and reserve.
- Cook the onion, carrot and celery in the remaining olive oil for about 3 minutes or until the onion softens slightly. Add 3 tablespoons of flour, seasonings, and salt and pepper to taste. Cook over medium heat for about 2 minutes.
- Add the potatoes, sweet potatoes, red pepper, white wine, browned chicken, and broth. Bring to a boil, reduce heat, and simmer covered for 30 minutes.
- Remove lid and add beans and cream. Simmer 10 more minutes uncovered.
