Pork meat, commonly consumed in many countries, is the subject of numerous preparations and culinary specialties. Pork can be prepared and eaten in different ways: salted, smoked, roasted, dried, grilled, stir-fried, steamed, pan-fried, braised, etc. But for some time, the price of pork has increased in Bobo-Dioulasso. Which means that the price of cuts of meat has also taken a hit. This is why we went to meet a pork seller. According to Benoît Sanou, seller of raw meat and baked pork in sector 9, Accart city district, “I have been selling pork since, so for 20 years. The price of pork has actually increased. This is due to their diet. To raise pigs, you need a lot of investment, especially to fatten them up. Since pork is sold by weight, the heavier the pork, the more expensive it is. It’s normal that it increases, because life itself has become expensive. I often buy my pigs for 100 thousand, 200 thousand, sometimes 50 thousand FCFA. I come to resell by making pork in the oven and selling the raw meat as well. Before we could get a piece of meat for 500 FCFA, sometimes even less than that. But now you need 1000 FCFA to have a small piece. Despite this, there are always customers and often that is not even enough. I manage to make a profit, so I don’t fill myself up.” Pork is an excellent source of protein, which is good for your health but should be consumed in moderation and allowed to cook well.
