However, only about a third of these come from Austria; most of the meat is freely imported from countries like Hungary. In the supply industry, the proportion is estimated to be between 70 and 80 percent, according to Hannes Royer, founder of the association “Land Creates Life”, during the Martinigansl season.
Thus Austria “takes a very original role” in goose fattening. “Without exception, every Austrian goose has a run. At EU level, there are not even minimum legal standards for goose farming. Austrian plate every year from varieties of farming that are not even allowed here,” said Royer. In Austria mandatory labeling of origin and farming is finally required, also for the catering industry.
Big differences in prices
The strict requirements for keeping geese in Austria make it much more expensive than those abroad. This year the price differences in purchases are particularly large. “Fresh Austrian Gansl costs an average of about ten euros per kilogram more wholesale than the frozen product from Hungary,” Royer said.
