With the arrival of winter, the urge to eat something warm to warm up a little. This proposal is really easy to do and it tastes great! It costs a few euros, is healthy and also perfect for vegetarians and vegans.

The good news is that we will use products that are normally found in the homes of all Italians: potatoes and beans.

Here’s how to use only 2 ingredients for a simple and tasty dish for a few euros! To enhance their flavor we will add some good extra virgin olive oil and some other easily available vegetables.

Let’s see how to prepay a yummy potato and bean soup.

Procedure

Let’s prepare the vegetables: peel the potatoes, cut them into not very large chunks to speed up cooking. We clean a shallot and cut it into chunks (an onion or a leek is fine too), we also peel some carrots and cut them into half rounds. We cut a celery stalk into small pieces.

As for the beans, we can use canned ones (at this point we drain them). Or we use beans previously cooked by us.

We put a non-stick steel or cast iron pan on the fire, where we will cook our soup and pour a little extra virgin olive oil. When the oil has heated up, add the shallot and let it brown, then add the celery and carrots. Let it cook over medium heat for a few minutes.

Next, add the potatoes and cover everything with water. When the water comes to a boil, add the beans, add salt and let our soup cook for about twenty minutes.

Our healthy and simple dish is ready!

We pour the soup into a deep dish, give it a sprinkle of black pepper and if you like, add some rosemary. We serve it accompanied with some croutons.
