I wonder how much information can be obtained from Boeing, aircraft manuals can be found in every cockpit.

Well, for example, the design/specifications of (parts of) aircraft, materials used, or equipment used in aircraft, or used to make (parts of) aircraft.

Or possibly competitively sensitive matters, such as contracts, information about negotiations regarding new orders, for example.

Or financial information about the company, various legal information, or personal data, with which one can possibly put pressure on/blackmail employees.

I can imagine that certain parties could have an above-average interest in these matters.
