Normandy Oyster Shack on Chemin de Gabardie: A Tradition for Toulouse Residents and New Year’s Eve Celebrations

This morning, Lisa and Jérémy Cussac have not yet opened their oyster shack when the first customers line up on the sidewalk, Chemin de Gabardi, opposite the Auchan and a stone’s throw from the Kiabi store. For three days, the couple will have shells on their plate since they plan to sell 4 tonnes of oysters from Normandy.

With the virus affecting the oyster beds of the Arcachon basin, these Normandy producers and refiners still had to review their plans. “It was a mess because some of our oysters were passing through the basin again. We had to bring them express from Normandy to ensure sales this weekend. We were taken by surprise, so there will be a lot of retail sales because, since the day before, we have only been able to pack a few hampers”, explains Lisa, who helps her husband on his vacation. “The rest of the time, I have my job,” she slips.

“This cabin has existed for 45 years”

The oyster shack counts many regular Toulouse residents among its customers. It must be said that these Norman oyster farmers have been setting up on Chemin Gabardie every year, during the holiday season, for several decades. “This cabin has existed for 45 years. Before that there was my godfather and my aunt. We are in our eighth season,” confirms Jérémy.

This Friday morning, Pierre is one of the first to arrive. He came early “because in an hour or two there will be a line of 20 people,” he warns. If he comes back to stock up every year, “for decades, it’s because the oysters are good here,” he explains, all smiles. And this year again, he took out three €50 notes to treat himself to his traditional seafood feast which he enjoys with a squeeze of lemon (citrus fruit provided by Lisa and Jérémy). “At home, we eat 12 per person, we are very fond of this product, so I will take fourteen dozen. And here, we have very good value for money,” concludes Pierre, before rushing into his sedan and to catch “the good New Year’s Eve” that Jérémy throws at him.
