In a few years, That man has become a veritable institution in the Lyon region.
The bar, restaurant and event venue franchise multiplied openings in Lyon then expanded to part of eastern France before targeting the west of the country with Rouen in 2023, a first in the history of this Lyon brewery born in 1997.
After Dijon and Mâcon, Ninkasi is targeting major cities
After a booming development in Lyon, the first openings in Bourgogne-Franche-Comté (Dijon, Mâcon), the network is now targeting the major French cities and their pools of partygoers. The founder of Ninkasi Christophe Fagier announced at the end of July to our colleagues of New Lyon his desire to open bars in Bordeaux, Toulouse and Rennes.
“After much speculation about upcoming openings, we are telling you the truth here. No Ninkasi in Marseille for the moment… But the year 2023 will be busy”, also laughs the brand website.
“Our points of sale are currently 450m2, it is becoming difficult to find in the city center. As we want to participate in their revitalization, we will see if it is possible to do Ninkasi in 300m2, particularly in Bordeaux, Toulouse and Rennes”, explains the entrepreneur from Lyon. The group uses the franchise system, which made the fortune of McDonald’s or Starbucks, to multiply openings. “Our goal is to make Ninkasi a national brand,” he aims.
Development continues in Lyon
After openings all over the place in Lyon in recent years, Ninkasi continues its development on the scale of the metropolis. While the brand is expected soon at Grand Parilly in Vénissieux in the Ikea sector, the bar-restaurant also wants to open in the up-and-coming district of La Saulaie in Oullinssouth of Lyon.
The network covers almost all the major districts of Lyon with multiple openings in Part-Dieu, OL Vallée near the large stadium, Sans Souci, Guillotière, Saint-Paul, Gratte-Ciel and La Doua in Villeurbanne, Gerland, Vaise, Gorge de Wolf…

The Gerland site will close and be transformed
The historic site of Gerland located near the metro and just opposite the LOU stadium must close in the fall of 2023, according to the big boss. The site has been sold and the establishment will be identically redone with a new café-concert concept. The Kao room will disappear, but could reopen in the Saulaie establishment.
The Gerland site must then reopen in 2025, according to Christophe Fagier.
New factory under construction
Finally, the group has just launched an important project in its history: the construction of a production plant for its own beer and its factory which should open in 2023 in Tarare (Rhône). The group is in discussion with the French giant Carrefour to distribute Ninkasi beer on the shelves all over France…
