New York Pizza Makers Face Threat to Traditional Wood-Ovens Due to Pollution Concerns

Between burgers, hot dogs and cupcakes, pizza is a staple of New York restaurants.

Americans are also the biggest consumers of pizza in the world, since they eat 3 billion a year. Yet in New York, pizza makers are angry. In a desire to reduce greenhouse gases, the city wants to change the wood-fired ovens in pizzerias, according to TF1 Info.

These wood-fired ovens, sometimes quite old, would release quite harmful fine particles and therefore would be too polluting. Nonsense for many restaurateurs: “Only a handful of wood-fired ovens remain. We have a derisory carbon footprint“, gets angry Scot Cosentino, manager of one of the most famous pizzerias in the Big Apple.

Overly expensive alternatives

To continue making pizza, restaurateurs must either invest in a particulate filtration system or switch to an electric oven. Measures that are too restrictive for the main parties concerned, and above all very costly.

The maintenance takes place every two weeks and it costs me around 2,500 euros per month“, explains a pizza maker who has already had to pay 20,000 euros for the installation of a filtration system. A dissatisfaction that should not deflect New York from its objective of reducing pollution in the city as much as possible.
