” I can not wait ! », Insists Véronique, 30 years old. On July 5, 2021, the restaurant Le XXI will open its doors at 41, rue aux Ours, in Rouen (Seine-Maritime). Within this inclusive facility, will work 15 employees, including 12 people with disabilities, like Véronique.
This ambitious and committed project is supported by the association Trisomy 21 Seine-Maritime Rouen. Laëtitia Henry, volunteer and vice-president, specifies that the teams are in the final preparations before the opening. “There were complications with the health crisis, but here we are! There is a lot of excitement! », She emphasizes.
Team spirit
A step inside the establishment, envy and good humor resonate between the renovated walls, with a slight hint of apprehension for some, like Kevin, 31 years old. “There is a bit of stress,” he admits. Very quickly reassured by his comrades, he smiles and jokes. He too is looking forward to the opening.
“We want a real team spirit and mutual aid. If someone has a problem, we are there for them, ”continue Véronique and Antonin. Albane, 23 years old confirms. “We’re all going to work together! The restaurant will operate with a weekly rotation of two teams of six people: three in the dining room and three in the kitchen.
My role is to support employees and adapt positions in the event of problems encountered.
The profiles are varied: some have less experience with the world of catering, and are thirsty to discover, others, like Julie, a graduate of a CAP in cooking, sees it as “a golden opportunity”.
Fresh and local products
The employees, aged between 20 and 30 for the most part, will be supervised by Hélène in the dining room, and Serge and Michel in the kitchen. “They’re fantastic, really. It will be alright ! We want to work stress-free, in a good atmosphere, and offer good food, ”insists Michel, toque on his head.
As for the cuisine, the restaurant menu highlights fresh, local products. “We start with simple recipes, such as half-cooked Japanese-style tuna, a veal shank tagine with pears, or even a calvados baba with apple confit,” continues the kitchen manager.
On the menu, customers will have the choice between three starters, three main courses, and three desserts – with a vegetarian offer -, as well as other essential à la carte dishes. Something to eat well, paying between 15 and 25 euros.
Autonomy
While the restaurant has not yet opened its doors and its secrets, the kitchens are already heating up. “For two weeks, we have been cooking. It brings the teams together, ”emphasizes Michel, before returning to watch over his cooks.
Access to employment is difficult for people with disabilities. It is mainly done through the protected work environment (MPT). But today, we are part of a desire to give them a job in the ordinary environment.
Each of the 12 employees sees a golden opportunity to gain experience and autonomy. “Of course, working gives you independence. Then we plan, an apartment, a house and a woman ”, adds Antonin, ardently. Enough to make all of his colleagues smile.
Julie, Albane, Kevin, Véronique and all the others are overflowing with motivation to welcome future customers to a pleasant, caring establishment… and where we enjoy!
