Homework of the sun

A former guide to the crypt of Chartres Cathedral, Aurora Martinez opened a Spanish grocery store at 4, rue Montescot. “I had a stand on the Christmas market at the end of 2021, and it worked very well,” explains this pure-bred Spaniard, who has lived in France since 2013.

Aurora Martinez offers all kinds of fresh and dried products, which she brings in especially from Spain through suppliers that she selects herself (olive oils, vinegars, turron, preserves, cheeses, cold cuts, etc. ). “To make it easier for customers to find their way around, on a map of Spain, I’ve given each region a color, and I’m writing labels for each product in the color referring to the region. This way, customers know immediately if the product comes from Andalusia, Galicia or Catalonia, for example. »

Quark Coffee

Dorothée Nicolle opened, on March 16, a specialty coffee shop in place of the former Peruvian shoe store Inkao, at 32, rue de la Poêle-Percée. “I work with small independent producers to offer a selection of coffees that respect the environment,” she explains. “Mountain arabicas produced in sustainable agriculture in the tropical belt, harvested by hand, roasted and dried with natural processes. »

The young woman, who also offers organic teas and accessories (coffee makers, cups, etc.), gave the name Séré to her business in reference to her grandparents, Lucien and Pauline Séré, who ran a ready-to-wear and wedding dresses in Châteaudun.

The Tuscan Villa

At the head of the Villa Toscane for a year, Moïse Calimia will expand the restaurant-caterer-delicatessen brand created twenty years ago by Sébastien Maugas, at 15, rue de la Pie. “I rented the premises located opposite La Villa Toscane, at 18 rue de la Pie, which for two years had housed a trade in pastries and world cuisine”, explains the manager.

What new brands are expected by spring in the city center of Chartres?

“After some work, we are going to transfer all of our delicatessen to this new location – we are going to take advantage of this to increase the range – as well as our small catering business (antipasti, charcuterie boards, etc.), as in an Italian trattoria . The Villa Tuscany, thanks to the space thus freed up, will be able to concentrate on its catering activity. It can accommodate up to 30 seats indoors, and around twenty outdoors. Opening scheduled for June.

Cobalt

Antoine and Fannie Brethereau, the owners of the restaurant Le Café Bleu, will open a chic bar in June, a few meters away, in the premises of the former restaurant Comme à Porto, at 1, rue Fulbert. “We can drink cocktails or very good wines there while tasting dishes to share, mezzé style”, sums up Antoine Brethereau.

“We recruited a bartender specializing in cocktails. We will also offer a very good wine list and we will have distributors of very good wines preserved under nitrogen, which we will sell by the glass. »

A beautiful musical atmosphere, with available vinyl or soundtrack, will be offered to customers, who can sit indoors (60 seats) or on the terrace (60 seats).

Artypik

Initially, Mathilde Gorges had the only project to relocate part of the editorial staff of the departmental magazine Epik or Nothing, of which she is editor-in-chief, in the 65 m² premises formerly occupied by a mutual insurance company, at the corner of rue des Changes and place Billard. But, over time, other ideas have been added to it and the project has been transformed. “I’m finally going to open a concept store at the beginning of July,” explains Mathilde Gorges.

Beautiful Italy

Since the beginning of the month, a new Italian restaurant concept has opened at 24, place des Halles, in place of the former La Récré store. “Every lunchtime, we offer a unique dish of the day, as well as two different pizzas to eat in or take away,” explains Aubrée Oddo, the manager, who converted to catering after being a caregiver for thirteen years. .

Customers can eat in the dining room (17 seats) or on the terrace in front of photographer Xavier Martino’s store. “I am associated with the managers of the Comptoir de la Mairie, the neighboring business,” adds the young woman. “As their establishment is closed in the evening, my customers will be able to use its terrace. Only restriction, as I don’t have an IV license, they will have to order food if they want to consume alcohol. »

The Montescot

Sylvain Gallouin and Pascal Gaüzéré had to close their restaurant, located at 30, place des Halles, in March 2021. “We noticed that a load-bearing beam was starting to sag,” explains Sylvain Gallouin. Heavy work had to be undertaken, and it was not until Monday May 2 that they were able to reopen the restaurant.

“With a new team, since the old one had left us. As in the past, the restaurant offers 180 covers (80 indoors, 100 outdoors) with a top-of-the-range brasserie menu.

Access & mobile

Installed for ten months on rue de la Poêle-Percée, the Access & mobile store moved to integrate, on April 30, the premises of the former Tocata store, at 4, rue des Changes. Émilie and Arnaud Graffin offer three types of products there: lithotherapy items, leather goods in synthetic or Italian leather, and steel jewellery.
