The menu of the future will largely consist not of what grew up in the garden or barn, but created in laboratories. And it is already being worked on intensively. Also in Latvia, by the way.
Earthworm protein products may become a kind of “Nokia” in Latvia – many people even hate to touch earthworms, but we will probably be happy to put them on our plate soon.
We will discuss dishes from earthworms, insects and larvae, as well as Latvian conservatism in food choices in this “Būra” series.
The duel is attended by:
- Ilga Gedrovica, a scientist who studies the use of earthworms as a source of protein;
- manager of Latvian traditional cuisine, businessman Gunārs Ķirsons.
Chef Kaspars Jansons and the head of the association “Green Freedom” Jānis Brizga will express the opinions of experts about the food of the future.
